The world famous gourmet delicacy beluga caviar is harvested from female Caspian Sea wild beluga sturgeon. Beluga caviar comes in 3 grades where 000 grade is the most expensive and has the largest egg size. Grade 00 and grade 0 beluga caviar are the other 2 grades.
There are two other caviars that you need to know about from the Caspian Sea and one of these is Osetra caviuar produced by the Osetra sturgeon, again one of the highest priced and most praised caviars in the World.
The final type of caviar from the Caspian Sea is Sevruga caviar and this mainly is Iranian sevruga caviar or Russian sevruga caviar. The finest caviar in the world comes from Kazakhstan and Katakhstan caviar is in high demand.
The summit of Caspian Sea caviar producing countries is held to discuss many issues including the caviar fishing policies of the Caspian Sea. Caspian Caviar is the finest caviar in the world, but farmed caviar is in fact growing in popularity due to its excellent quality and taste, rivaling that of wild Caspian caviar.
Due to a decline in numbers of wild Caspian Sea sturgeon, caviar farming is now a big industry that supplies the global demand for caviar in an ecologically sustainable way. Caviar farming both supplies the world demand for quality beluga caviar, sevruga caviar and osetra caviar whilsst at the same time allows the Caspian Sea and Black Sea to recover its sturgeon stock to more reasonable numbers.
